I'm from Tipperary originally fell in to catering by accident.
In April of 1996, I started working in The Restaurant, Malahide Castle after Mr Fowler offered me the position of Food Service Assistant. I left the Castle to attend College. I was educated at the CERT Torc GSH, and the Galway Mayo Institute of Technology, and on leaving received a Distinction in Professional Cookery.

On leaving Galway, I spent the next 18 months working in The Grand Hotel in Fermoy. I returned to Malahide Castle in May of 1999, where I have worked since. In June of 2003 I applied for the Catering Contract in The Restaurant, Malahide Castle, which I was awarded and have worked there since.
